The act of welcoming guests is executed as a meticulously planned, swift operation that reflects immense dedication. Rather than merely delegating tasks, the host orchestrates the preparation down to the finest details, combining agility with the utmost respect for his visitors. An intense focus on speed characterizes the entire endeavor, reflecting the alacrity required when fulfilling a Commandment [אלשיך]. Because Sarah's tent was nearby, this haste did not manifest as physical running, but rather in the urgency of the actions and the hastening of the household staff [העמק דבר]. Furthermore, the guests needed to continue their journey to Sodom that very day, making it necessary to prepare the food quickly before the dough could leaven [חזקוני, ביאור יש״ר].

Direct instructions to knead the dough emphasize the importance of personal involvement [אבן עזרא]. Even with maidservants available, Abraham wanted Sarah to personally take hold of the Commandment and perform the labor herself [אלשיך, מלבי״ם]. His precise culinary directives reveal a deep familiarity with kitchen work, ensuring no delay occurred between the kneading and the baking [קונטרס חיבה יתירה, אלשיך].

The preparation involved a massive quantity of grain, three measures equivalent to an entire ephah, for only three individuals. Commentators offer several explanations for this extraordinary volume. It can be seen as a display of extreme generosity, providing an abundance from which the guests could take whatever they desired [ביאור יש״ר, רבנו בחיי]. Apportioning exactly one measure per guest also served to grant them equal honor and prevent any feelings of jealousy [רד״ק, רבנו בחיי]. However, the primary approach among commentators is that this vast amount of raw grain was necessary to sift and extract a much smaller, highly refined yield of premium fine flour. This meticulous sifting would produce exactly one standard portion per guest [רמב״ן, רש״ר הירש, חזקוני, פרדס יוסף, הטור הארוך]. Other perspectives suggest the extra food was meant as provisions for the road [שד״ל], that the heads of the household dined alongside their guests as a sign of respect [רמב״ן, הטור הארוך], or simply that a full oven is required to bake bread properly [חזקוני].

The instructions explicitly call for both standard flour and fine flour. Standard flour consists of whole ground grains including the bran, whereas fine flour is the pure, premium inner core extracted after rigorous sifting [הכתב והקבלה, רש״ר הירש]. The primary approach among commentators is that Abraham requested two entirely separate items: the premium fine flour was intended for baking cakes, while the simple flour was to be used as a starch by the cooks to seal the meat pots and absorb the impurities during cooking [רש״י, רמב״ן, גור אריה, מזרחי, שפתי חכמים]. Conversely, a tradition brought by several commentators interprets the mention of both types of flour as a subtle difference in hospitality styles, suggesting that women may naturally be more frugal with guests than men. According to this view, Abraham initially asked for standard flour, but quickly feared that Sarah, reluctant to waste precious resources on mere passersby, would use inferior ingredients. Therefore, he immediately corrected himself, emphasizing that he specifically required the most premium fine flour [כלי יקר, תורה תמימה, הכתב והקבלה, הדר זקנים].

Ultimately, the desired result was the creation of cakes. These were thin, round flatbreads baked rapidly directly on hot coals. This method was customary at the time, specifically chosen to expedite the serving of food for travelers who were hurrying along their way [רד״ק, שד״ל, ביאור יש״ר, ביאור שטיינזלץ].
